RC Planes have come a long way from the first models that required to you operate them with string and a handle turning around in a circle just as our first Cox PT19 did.
Now, with modern technology and so many different plane manufacturers you can get a vintage world war 1 plane and fly it remotely with a camera in it, or even get a replica of the deadly (of course minus the deadly payload) Predator Drones that the military currently uses. In today's, world ever the most advanced military on the Earth fly's radio controlled planes.
There are a lot of different manufacturers of RC Planes and the variety of planes to choose from is pretty great.
The one you decided to use just depends on the type of plane your looking for and your budget.
All planes use the same principals of flight and aircraft construction. Use the lightest materials possible while assuring they are strong enough to last and survive the rigors of flight. Of course, some are better than others and again depending on what your willing to spend, the electronics can go from being very basic to being top notch and very sophisticated.
Once you have decided what you budget is, you then need to decide between using either gas powered or electric. They both have their pros and cons:
Gas Pros: Can fly longer, less downtown between refueling's, the smell of burning RC aviation fuel smells fantastic :)
Cons: Flammable, must be handle with caution and kept away from kids.
Electric Pros: Cleaner and quieter engines.
Cons: Take longer for recharging the batteries. Need to have numerous batteries on hand to spend an afternoon of flying.
Every aviator has their preference. We prefer the gas powered models simply because that is what we are used to and enjoy flying.
